Flaking 101

Flaking is the process of steaming and rolling whole grains to make them more functional, versatile, and consistent for food, beverage, and specialty uses. At 1331 Flaking, we take grain grown on our family farm and process it with food-grade precision so our customers, from distilleries and breweries to bakeries and beyond, receive fresh, high-quality flakes every time.

How it Works

Steam & Moisture

Steam and a light mist of hot water add 3–5% moisture. This softens the kernel and gelatinizes the starches, unlocking nutrition and performance.

Precision Flaking

Our mill rolls with 10 grooves per inch, pressing kernels into thin, uniform flakes. They’re flattened, not broken, for consistency you can count on.

Flakes are cooled, dried, and packaged fresh in our food-grade facility.
Made to order — never stored in a warehouse.

Warming the Grain

We gently warm each kernel with LP gas and air. This slow, even heat prepares the grain for moisture to reach
the center.

Precision flaked. Always fresh. From our farm to you.
